I made a vegan chicken mayo sandwich using Quorn vegan savoury pieces and B-Well thick and creamy mayo, and it tasted awesome!

It tastes like chicken
When I went vegan in 2011, I would not have believed you if you had said that I would be able to eat a vegan chicken mayo sandwich, that looks like chicken, and tastes like chicken, but isn’t. However, I found this awesome brand called Quorn, who make these magic vegan ‘chicken’ style products. They currently have a small selection of vegan products available in SA that are healthier, cruelty free, alternatives to chicken. If you have not tried any of them yet, you have too. You can find them in the freezer section at Pick ‘n Pay, Spar and Checkers. Remember to look out for the Vegan label on the front of their packaging, as most of the Quorn products are Vegetarian.
Vegan chicken mayo
To create this vegan chicken mayo, I fried an onion, together with the Quorn vegan savoury pieces, Ina Paarman chicken spice, salt and pepper. Then I mixed fresh parsley, chives and dill, Ina Paarman lemon & rosemary spice, with some B-Well thick and creamy mayo. I sliced up some freshly baked farm-style vegan bread, added basil and lemon pesto from Pesto Princess, fresh rocket, baby butter lettuce, and cucumber. Lastly, I added the vegan chicken mayo on top, and viola!
By the way, I find the mayo mix also works really well in a potato salad. Have a look at my b-well mayo post here, to see what other vegan mayo’s they offer.
