Quorn vegan schnitzel
I’m totally obsessed with Quorn’s vegan schnitzel. Of the small selection of Quorn vegan products that are available in SA, it is the one I love the most, because it goes great with everything. It really does taste like a crispy chicken schnitzel but it’s a healthier, cruelty free alternative. If you have not tried any of their vegan products yet, you have too. You can find them in the freezer section at Pick ‘n Pay, Spar and Checkers. Remember to look out for the Vegan label on the front of their packaging, as most of the Quorn products are Vegetarian.

Firstly, to create this vegan basil pesto veg bowl, I baked the Quorn vegan schnitzel in the oven. I steamed some broccoli, peas, cauliflower and baby marrow. Then I cut the Quorn vegan schnitzel into pieces and mixed it with the veg. Lastly, I made a homemade vegan basil pesto. I always thought that basil pesto was difficult to make, but discovered it is so easy and takes only 5 minutes. Pesto will keep in the refrigerator in an airtight container for a few days or freeze for up to several months.
