I’ve been making vegan peanut butter cookies for my fiancée Grant. He doesn’t eat peanut butter but he loves peanut butter cookies! 💚
They are easy to make and are ready to eat in less than half an hour, from when you start making them. That is if you don’t wait for them to cool down first as he does 😋


Ingredients
1 cup of @the_gerrys_store peanut butter
1 cup @eurekamills cake flour
1/2 cup coconut sugar
1 tsp baking soda
1/2 tsp Himalayan salt
1 tsp vanilla extract
1/4 cup @drinksomaco Oatify oat milk
Instructions
1.Take two bowls, and mix together the wet ingredients in one and the dry in the other.
2. Combine the wet and dry. The plan is to take the mix and break it into equal size balls. If it is too sticky to handle then add more milk and if it is too runny add a bit more flour.
3. Place the balls far enough apart on an oiled baking tray, to allow each ball to be squished. I usually made big balls, so when squished you get a big cookie. Using my hands, I press the balls into flat shapes, then I use a fork to flatten them out evenly.
4. Place the tray in a preheated oven (180 degrees) and bake for about 15-20 minutes. We like crunchy cookies, so if you like them soft you could take them out at around 10 minutes.
