A quick and easy vegan lunch bowl with Quorn vegan nuggets, potato wedges, and a salad with a homemade balsamic dressing.

Quorn vegan nuggets
I love Quorn’s vegan nuggets as they are basically small versions of their vegan schnitzel which I used in a recipe here. Of the small selection of Quorn vegan products that are available in SA, it is the one I think will appeal to kids the most. It really does taste like crispy chicken nuggets but is a healthier, cruelty free alternative. If you have not tried any of their vegan products yet, you have too. You can find them in the freezer section at Pick ‘n Pay, Spar and Checkers. Remember to look out for the Vegan label on the front of their packaging, as most of the Quorn products are Vegetarian.
Quick vegan lunch bowl
For this vegan lunch bowl, I baked the Quorn vegan nuggets in the oven, together with potato wedges which I drizzled with olive oil and spiced with salt, pepper and paprika. While the nuggets and wedges were in the oven I made a quick salad with tomato, cucumber, salad leaves, sesame seeds, pumpkin seeds and my homemade balsamic dressing.
