I quickly threw together this vegan broccoli pesto pasta dish using penne pasta, steamed broccoli, Pesto Princess Basil & Lemon pesto and Oryx pepper and salt.

Quick and easy meals

We all have those days, especially during the week, when we just want to throw together a quick meal that does not require a huge amount of effort. This vegan pasta dish is exactly that. I love that products, like the dairy free vegan basil and lemon pesto by Pesto Princess, exist, because it means it gives me the opportunity to make my meal prep quicker, especially on days when I don’t feel like cooking. The pesto is truly delicious and I have used it many times, see here and here.

I love making simple dishes like this where there are only a few ingredients. I mixed penne pasta, with steamed broccoli and the Pesto Princess Basil & Lemon pesto.

If you’d like to make this dish gluten free you could switch the penne pasta for a gluten free version. And to replace the carbs you can use zucchini noodles instead. And if you feel like making a homemade pesto, instead of using a store bought version have a look at my recipe here.

spicy vegan wrap recipe

This spicy vegan wrap consists of a brown wheat flour wrap, which is filled with rocket, salad leaves, red onion, sundried tomatoes, avo and red kidney beans, together with some amazing Pesto Princess harissa paste. Served with a small side salad with avo and rocket.

Firstly, I love making vegan wraps because they are quick, easy as well as a great way to mix all my favourite fresh ingredients.

Spicy vegan wrap

Pesto Princess have a range of dairy free vegan products. I have wanted to use their harissa paste in a spicy vegan wrap for a while now. For more info about their products have a look at my posts here and here.

For this spicy vegan wrap recipe I used brown wheat flour wraps from Woolworths, and spread a base of Pesto Princess harissa paste on each wrap. I then added rocket, salad leaves, red onion, Mediterranean Delicacies sundried tomatoes, avo and red kidney beans and served it with a small side salad of avo and rocket. Except for the wraps, I bought all the ingredients from Checkers.

Vegan mushroom biltong – Air dried foods

Vegan mushroom biltong

I used to love biltong, after all it is a South African classic. Like many others, I did not become Vegan because I did not like the taste of meat. If you’d like to know about my Green Vegan Journey have a look here. When I first went Vegan i did not know that there were Vegan versions of things like cheese, meat, ice cream and even biltong. Vegan mushroom biltong for example is typically dried and spiced in the same way as traditional biltong.

I remember the first time I tried vegan biltong made from mushrooms. It was a few years ago, and I was at a shop with my Mom, who became Vegan soon after me. I was so excited to try it that I opened the packet before I even got to the car. I was amazed at the flavours and the texture, as it was the closest I had come to a biltong flavour since going Vegan in 2011.

Fast forward to 2018, the vegan biltong flavours have greatly improved, and the available options have drastically increased. I’m always keen to try every single new vegan biltong product I find. So far I’ve tried a number of different versions of mushroom biltong, and even found a biltong made from gluten.

Air dried Foods – Dried Mushroom snack

I first spotted the vegan mushroom biltong from Air Dried Foods a few months ago at the Vegan Goods Market. They call it a dried mushroom snack I call it biltong. Now, every time I go to the market, I get some. They are made by a small family-run business. There are 3 options: Oyster, Brown and Shiitake. The mushrooms are dehydrated, and seasoned with tamari sauce, apple cider vinegar, olive oil and coriander seeds. I like the brown mushroom one the most. I have noticed that if I eat a lot in one go, then it becomes very salty.

Where to buy

The Vegan Goods Market is open from 10am to 2pm on every first Saturday of the month. The market is held at the Khanyisa Waldorf School, 4 Victoria Rd, Plumstead, Cape Town. The next time you go, be sure to stop at the Air Dried Foods stall and taste the various flavours of their vegan mushroom biltong. You can also buy it online on the Faithful to Nature online shop, as well as on The Bespoke Artichoke online shop.

Vegan basil pesto veg bowl recipe with Quorn *

A vegan basil pesto bowl with Quorn vegan schnitzels. Schnitzels cut into pieces, and mixed with steamed broccoli, peas, cauliflower, baby marrow and a homemade vegan basil pesto.

I’m totally obsessed with Quorn’s vegan schnitzel. Of the small selection of Quorn vegan products that are available in SA, it is the one I love the most, because it goes great with everything. It really does taste like a crispy chicken schnitzel but it’s a healthier, cruelty free alternative. If you have not tried any of their vegan products yet, you have too. You can find them in the freezer section at Pick ‘n Pay, Spar and Checkers. Remember to look out for the Vegan label on the front of their packaging, as most of the Quorn products are Vegetarian.

Vegan basil pesto

Firstly, to create this vegan basil pesto veg bowl, I baked the Quorn vegan schnitzel in the oven. I steamed some broccoli, peas, cauliflower and baby marrow. Then I cut the Quorn vegan schnitzel into pieces and mixed it with the veg. Lastly, I made a homemade vegan basil pesto. I always thought that basil pesto was difficult to make, but discovered it is so easy and takes only 5 minutes. Pesto will keep in the refrigerator in an airtight container for a few days or freeze for up to several months.

berry nice vegan muesli bowl recipe

A berry nice vegan muesli bowl with muesli, dairy free milk and topped it with coconut chips, fresh raspberries & sliced banana.

Vegan muesli bowls are one of my go to breakfasts because they are quick and easy. I used the Passion 4 Wholeness breakfast muesli. It’s a great mix of rolled oats, almonds, raisins, coconut flakes, pumpkin seeds, cranberries and cinnamon.

I added dairy free milk and topped it with Good Life Organic coconut chips, fresh raspberries & sliced banana. I really hope you like this recipe as much as I do!

I am crazy about this dairy free basil and lemon vegan pesto from Pesto Princess!!!! Yup it is vegan, and whats even better is that it’s not their only vegan flavour.

Firstly, as a vegan, ingredient checking is second nature. I’m always taking products of the shelf, turning it around and reading through the sometimes very long list of ingredients. Most of the time i sigh, and put the product back, as it either contains some or other animal product, honey or palm fruit oil. (Read more about what I eat and don’t eat here.)

Then, one day i spotted the dairy free sign on one of the pesto princess bottles and turned it around, and to my surprise the pesto was vegan. Finally, a vegan pesto without pecorino cheese. I was so excited because up until then every pesto I had looked at had contained pecorino.

So since then, I have used the basil and lemon pesto in various recipes ranging from brushetta to pasta.

More from Pesto Princess

To my surprise, Pesto Princess have quite a few dairy free vegan pesto products. I buy them quite often as they are delicious and most other pesto’s on the market contain cheese. I have tried most of their dairy free vegan pesto flavour and they are all amazing. You just have to try them! Remember to look out for the black dairy free circle on the front of the jar. I add them to my sandwiches, pasta dishes, wraps and even add some on my vegan pizza.

They also have a dairy free harissa paste, chermoula paste and a chimichurri sauce. I used the Pesto Princess dairy free Harissa Paste in a spicy vegan wrap recipe.

Vegan lunch bowl recipe with Quorn *

A quick and easy vegan lunch bowl with Quorn vegan nuggets, potato wedges, and a salad with a homemade balsamic dressing.

I love Quorn’s vegan nuggets as they are basically small versions of their vegan schnitzel which I used in a recipe here. Of the small selection of Quorn vegan products that are available in SA, it is the one I think will appeal to kids the most. While the nuggets and wedges were in the oven I made a quick salad with tomato, cucumber, salad leaves, sesame seeds, pumpkin seeds and my homemade balsamic dressing.
