Quick and easy meals
We all have those days, especially during the week, when we just want to throw together a quick meal that does not require a huge amount of effort. This vegan pasta dish is exactly that. I love that products, like the dairy free vegan basil and lemon pesto by Pesto Princess, exist, because it means it gives me the opportunity to make my meal prep quicker, especially on days when I don’t feel like cooking. The pesto is truly delicious and I have used it many times, see here and here.
I love making simple dishes like this where there are only a few ingredients. I mixed penne pasta, with steamed broccoli and the Pesto Princess Basil & Lemon pesto.
If you’d like to make this dish gluten free you could switch the penne pasta for a gluten free version. And to replace the carbs you can use zucchini noodles instead. And if you feel like making a homemade pesto, instead of using a store bought version have a look at my recipe here.
