What is bruschetta?

Bruschetta, pronounced “brusketta” is an italian antipasto, or what we’d call appitizer, which i think is très magnifique. In Italian restaurants, it traditionally combines toasted bread rubbed with garlic, which is then topped with pepper, salt, olive oil, basil and tomato. There are many variations some which add cheese, meat, onion and other vegetables.

I bought an olive ciabatta from Baker Extraordinaire at the Vegan Goods Market, and was inspired to make a vegan bruschetta. It was quick and easy and combined olive oil, tomatoes, red onions, fresh basil, kalamata olives together with the dairy free basil and lemon pesto from Pesto Princess
